  • 100g pitted dried dates
  • 100g dried dessert figs
  • 75g glace apricots
  • 100g raisins
  • 75g sultanas
  • 50g red glace cherries, quartered
  • 125ml (1/2 cup) dark rum or brandy
  • Melted butter, to grease
  • 200g good-quality dark chocolate, chopped
  • 125g butter, at room temperature, cubed
  • 140g (2/3 cup, firmly packed) dark brown sugar
  • 2 eggs, at room temperature
  • 115g (3/4 cup) plain flour
  • 1 teaspoon mixed spice
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon baking powder
  • Icing sugar, to dust
  • Double cream or vanilla ice-cream, to serve

Method

  • Step 1
    Chop the dates, figs and apricots until they are roughly the same size as the raisins. Place in a large heatproof bowl with the raisins, sultanas and cherries. Heat the rum or brandy in a small saucepan over medium-high heat until it is hot. Add to the fruit mixture and stir well to combine. Cover and set aside for 1-3 days to macerate.
  • Step 2
    Preheat oven to 150�C. Brush 12 medium (125ml or 1/2-cup) muffin pans with the melted butter to grease.
  • Step 3
    Place half the chocolate in a small heatproof bowl over a saucepan of simmering water (make sure the bowl doesn?t touch the water). Use a metal spoon to stir often until smooth. Remove the bowl from the pan and set aside.
  • Step 4
    Use electric beaters to beat the butter and sugar in a medium bowl until well combined. Add the eggs 1 at a time, beating well after each addition. Use a wooden spoon to stir in the melted chocolate.
  • Step 5
    Sift the flour, mixed spice, nutmeg and baking powder together. Stir into the fruit mixture with the remaining chopped chocolate. Add the chocolate mixture and stir until well combined.
  • Step 6
    Divide the mixture among the greased pans and bake in preheated oven for 45 minutes or until a skewer inserted in the centres of the cakes comes out clean. Set aside for 10 minutes and then transfer to a wire rack.
  • Step 7
    Serve the fruitcakes warm or at room temperature, dusted with icing sugar and accompanied by the cream or ice-cream.
