Ingredients

  • 1 tablespoon peanut oil
  • 700g Coles Australian Gravy Beef, cut into 3cm pieces
  • 1/3 cup (100g) yellow curry paste
  • 1 brown onion, chopped
  • 400ml can coconut milk
  • 1 cup (250ml) beef stock
  • 1 large sweet potato, peeled, chopped
  • 300g cauliflower, cut into florets
  • 100g green beans, trimmed, cut into 3cm lengths
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • Steamed jasmine rice, to serve
  • 1/4 cup coriander leaves, to serve
  • Lime halves, to serve

Method

  • Step 1
    Heat oil in large saucepan over medium-high heat. Cook beef for 5 mins or until browned all over. Add curry paste and onion. Cook, stirring, for 2 mins or until fragrant. Add coconut milk and stock. Bring to the boil. Reduce heat to low. Cover and simmer for 1 1/2 hours or until beef is tender.
  • Step 2
    Add sweet potato. Cook for 20 mins or until sweet potato is almost tender. Add cauliflower, beans, fish sauce, sugar and lime juice. Cook for 7 mins or until heated through and vegetables are tender.
  • Step 3
    Serve curry with rice, coriander and lime halves.
