2 red chillies, de-seeded

10g galangal (or ginger), peeled and sliced

1 tablespoon coriander seeds

1 tablespoon cumin seeds

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

1/4 teaspoon ground cloves

1 teaspoon ground cardamom

2 tablespoon fish sauce

1 teaspoon shrimp paste

1/2 can coconut milk (see notes)

Additional fish sauce, to taste (add fish sauce instead of salt)
Method

Step 1Grind coriander seeds, cumin seeds and nutmeg in a pestle and mortar.

Step 2Place all ingredients in a food processor (or blender) and process well.

Step 3To use immediately, place sauce in a casserole or baking dish together with chicken, seafood or vegetables.
