  • 2 teaspoons extra virgin olive oil
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 2 litres water, boiling
  • 2 tomatoes, seeded, diced
  • 180g packet minestrone soup
  • 375g packet fresh veal tortellini
  • 1/2 cup frozen peas
  • 1/4 cup parmesan, grated
  • Fresh flat-leaf parsley leaves, chopped, to serve


  • Step 1
    Heat oil in a large saucepan over mediumhigh heat. Add carrot and celery. Cook, stirring, for 3 to 4 minutes or until softened.
  • Step 2
    Add boiling water, tomato and soup mix with stock sachet. Bring to a simmer. Reduce heat to medium. Cover. Cook, stirring occasionally, for 15 minutes, adding tortellini and peas for the last 3 minutes of cooking time or until soup mix and tortellini are tender. Season with salt and pepper.
  • Step 3
    Serve topped with parmesan and parsley.
