  • Alfa One rice bran oil cooking spray
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 1/2 (600g) Chinese cabbage (wombok), finely shredded
  • 2 medium carrots, peeled, grated
  • 1 large zucchini, trimmed, grated
  • 1 cup beansprouts
  • 1 tablespoon salt-reduced soy sauce
  • 20 (300g packet) spring roll wrappers, thawed
  • Sweet and sour sauce, to serve


  • Step 1
    Preheat oven to 200�C/180�C fan-forced. Line 2 large baking trays with baking paper.
  • Step 2
    Spray a large frying pan with oil. Heat over medium-high heat. Add onion and garlic. Cook for 3 minutes or until fragrant. Add cabbage, carrot and zucchini. Cook, stirring, for 5 minutes or until cabbage has wilted. Remove from heat. Stir in beansprouts and soy sauce.
  • Step 3
    Place 1 wrapper on a flat surface, with 1 corner facing you. Place 2 tablespoons vegetable mixture along centre of wrapper. Fold corner over filling. Fold over sides and roll up tightly to enclose. Brush remaining corner with water. Press to seal. Place, seam side down, on prepared baking tray. Repeat with remaining wrappers, cabbage mixture and water. Spray rolls with oil.
  • Step 4
    Bake for 25 to 30 minutes or until light golden and crisp. Serve with sauce.
