  • 1 large orange
  • 185ml (3/4 cup) water
  • 70g (1/3 cup) caster sugar
  • 1 teaspoon whole cloves
  • 1 teaspoon cardamom seeds
  • 1 cinnamon stick, broken in half
  • 800g seedless watermelon, peeled, thinly sliced
  • Greek-style natural yoghurt, to serve


  • Step 1
    Use a zester to remove the rind from the orange. (Alternatively, use a vegetable peeler to peel the rind. Use a small sharp knife to remove white pith. Cut the rind into very thin strips.) Juice the orange. Strain into a jug. Discard pulp.
  • Step 2
    Stir the orange juice, orange rind, water, sugar, cloves, cardamom and cinnamon stick in a saucepan over medium heat. Increase heat to high. Bring to the boil. Reduce heat to medium. Boil for 8 minutes or until reduced by almost half. Set aside to cool. Strain into a jug. Discard cloves, cardamom seeds and cinnamon, reserving the rind. Place the syrup in the fridge to chill.
  • Step 3
    Divide watermelon among serving glasses. Pour over syrup. Top with the reserved rind. Serve with yoghurt.
