  • 200g mung bean vermicelli noodles
  • 1 large red capsicum, deseeded, thinly sliced
  • 2 Lebanese cucumbers, peeled into ribbons
  • 1/2 red onion, halved thinly sliced
  • 2/3 cup fresh mint leaves
  • 1/2 cup torn fresh Thai basil leaves
  • 2 (about 200g each) tuna steaks
  • Olive oil cooking spray
  • Lime wedges, to serve


  • Step 1
    Place the noodles in a heatproof bowl. Cover with boiling water. Allow to soak for 10 minutes until tender. Drain.

    Meanwhile, combine the dressing ingredients in a small bowl. Set aside.
  • Step 3
    Place the capsicum, cucumber, onion, mint and basil in a large bowl. Add the noodles and toss.
  • Step 4
    Heat a frying pan over a high heat. Spray the tuna steaks with oil. Cook for 1-1 1/2 minutes each side, so that the tuna is still pink in the middle.
  • Step 5
    Slice the tuna and add to the noodles. Pour over the dressing and toss to combine. Serve immediately with lime wedges.
