How are you? , I hope you’re having an incredible day today. Today, we’re going to make a special dish, Three-cheese pumpkin and sage pasta bake. It is one of my favorites food recipes. For mine, I am going to make it a little bit tasty. This is gonna smell and look delicious.

Ingredients

400g orecchiette pasta

450g butternut pumpkin, peeled, seeded

2 tablespoons olive oil

8 large sage leaves

300g fresh ricotta
-
60g (3/4 cup) finely grated parmesan

180g (1 1/2 cups) grated extra-sharp cheddar

2 teaspoons plain flour
-
430ml (1 3/4 cups) milk

2 tablespoons pepitas (see note) (green pumpkin seeds)

20g dried breadcrumbs
Method

Step 1Preheat oven to 200C fan-forced. Bring a large saucepan of salted water to the boil and cook pasta for 9 minutes or until firmer than al dente.

Step 2Meanwhile, cut pumpkin into rough 1cm pieces. Place in a bowl with oil, then season with salt and pepper and toss to combine. Heat a heavy-based frying pan over medium heat. Add pumpkin, tear over half the sage leaves and cook, tossing occasionally, for 5 minutes or until lightly golden and three-quarters cooked.

Step 3Process ricotta, parmesan, 120g (1 cup) cheddar, flour, 1 teaspoon salt and freshly ground black pepper in a food processor until smooth. Add milk and process until smooth.

Step 4Drain pasta, then tip into a 1.5L (6-cup) ovenproof dish. Pour over ricotta mixture, then stir in pumpkin mixture. Combine pepitas, breadcrumbs and remaining 60g (1/2 cup) cheddar in a bowl, tear in remaining sage leaves, then scatter over top of bake.

Step 5Bake for 15 minutes or until top is golden. Serve immediately.
