8 (about 150g each) ripe tomatoes

500g fresh ricotta

85g (1/3 cup) black olive paste

Salt & ground black pepper

1 bunch mizuna, ends trimmed, washed, dried
Method

Step 1Use a small, sharp knife to cut a shallow cross in the base of each tomato. Place tomatoes in a large heatproof bowl, cover with boiling water and set aside for 1 minute. Drain and cool in a large bowl of cold water. Once tomatoes are cool enough to handle, carefully remove the skins. Transfer to a large plate and set aside.

Step 2Place ricotta, olive paste, salt and pepper in a medium bowl. Use a fork to mix until combined.

Step 3To make the basil dressing, place the oil, basil, vinegar, honey, garlic, salt and pepper in a blender and blend until smooth. Transfer to a small bowl and set aside.

Step 4To assemble, divide the mizuna leaves among the centres of serving plates. Cut each tomato crossways into 3. Place tomato bases on mizuna beds and spread 2 tablespoons of ricotta mixture over each. Repeat layering with centre tomato pieces and ricotta mixture, then place the tomato tops on top. Drizzle with basil dressing and serve.
