  • 8 (about 150g each) ripe tomatoes
  • 500g fresh ricotta
  • 85g (1/3 cup) black olive paste
  • Salt & ground black pepper
  • 1 bunch mizuna, ends trimmed, washed, dried

    Use a small, sharp knife to cut a shallow cross in the base of each tomato. Place tomatoes in a large heatproof bowl, cover with boiling water and set aside for 1 minute. Drain and cool in a large bowl of cold water. Once tomatoes are cool enough to handle, carefully remove the skins. Transfer to a large plate and set aside.

    Place ricotta, olive paste, salt and pepper in a medium bowl. Use a fork to mix until combined.

    To make the basil dressing, place the oil, basil, vinegar, honey, garlic, salt and pepper in a blender and blend until smooth. Transfer to a small bowl and set aside.
  • Step 4
    To assemble, divide the mizuna leaves among the centres of serving plates. Cut each tomato crossways into 3. Place tomato bases on mizuna beds and spread 2 tablespoons of ricotta mixture over each. Repeat layering with centre tomato pieces and ricotta mixture, then place the tomato tops on top. Drizzle with basil dressing and serve.
