  • 180g butter, melted
  • 1 cup natural granulated sweetener
  • 2 eggs, lightly whisked
  • 2/3 cup (160ml) Prima No Added Sugar Tropical Flavour
  • 1 1/2 cups (240g) wholemeal plain flour
  • 1/2 cup (75g) self-raising flour
  • 1 1/2 cups (120g) desiccated coconut
  • 1/2 cup drained canned pineapple pieces in juice, chopped
  • 2 tbs shredded coconut


  • Step 1
    Preheat oven to 180�C. Grease an 18cm x 28cm (base measurement) slice pan and line the base and 2 long sides with baking paper, allowing the sides to overhang.
  • Step 2
    Combine the butter, sweetener, egg and fruit drink in a large bowl. Stir in combined flour, desiccated coconut and pineapple until well combined. Spoon mixture into prepared pan. Bake for 25 mins or until firm to the touch. Set aside in the pan to cool.
  • Step 3
    To make the frosting, use an electric mixer to beat the cream cheese, butter, fruit drink and sweetener in a bowl until smooth. Spread frosting over the top of the slice. Sprinkle with shredded coconut. Cut into pieces to serve.
