Ingredients

  • 1/4 cup salt
  • 1kg watermelon rind (see note)
  • 1kg (4 1/4 cups) white sugar
  • 1 tablespoon black peppercorns
  • 2 1/2 cups white wine vinegar
  • 2 teaspoons whole cloves
  • 2 cinnamon sticks
  • 3 strips orange rind, pith removed

Method

  • Step 1
    Combine salt and 4 cups of water in a glass bowl. Stir until salt dissolves. Using a sharp knife, cut watermelon rind into thin, 5cm-long strips. Add to salted water. Cover. Stand at room temperature overnight.
  • Step 2
    Drain well. Place rind into a large saucepan. Cover with cold water. Bring to the boil over medium heat. Reduce heat to low. Simmer for 15 minutes or until rind is tender. Drain.
  • Step 3
    Combine sugar, peppercorns, vinegar, cloves, cinnamon, orange rind and 2 cups of water in a large saucepan over low heat. Cook, stirring, for 15 to 20 minutes or until sugar has dissolved. Bring to the boil. Boil for 5 minutes. Add watermelon rind. Simmer, uncovered, for 45 minutes or until rind is transparent and syrup has thickened.
  • Step 4
    Pour hot pickle into 2 x 3-cup capacity hot sterilised jars. Seal. Turn upside down for 2 minutes. Turn upright. Stand for 3 weeks before using. Serve with strong cheddar cheese and crackers.
