Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 brown onion, finely chopped
  • 2 celery stalks, finely chopped

  • 2 sprigs fresh thyme
  • 375g packet French-style lentils, rinsed, drained

  • Step 1
    Prepare lentils: Heat oil in a large, deep frying pan over medium heat. Add onion, celery and eggplant. Cook, stirring occasionally, for 10 minutes or until vegetables are starting to soften.
  • Step 2
    Add the garlic. Cook for 1 minute. Add tomatoes, tomato paste, 1/3 cup water, bay leaf and thyme. Cover. Bring to the boil. Reduce heat to low. Simmer for 10 minutes. Add lentils. Simmer for a further 15 to 20 minutes or until lentils are almost tender.
  • Step 3
    Heat a large, deep frying pan over medium-high heat. Add curry paste. Cook, stirring, for 1 to 2 minutes or until fragrant. Add braised lentils. Cook, stirring, to combine. Cover. Bring to a simmer. Reduce heat to low. Simmer, stirring occasionally, for 10 minutes.
  • Step 4
    Meanwhile, heat oil in a large frying pan over medium-high heat. Add sweet potato and onion rings. Cook, turning occasionally, for 10 minutes or until browned and tender. Season well with salt and pepper.
  • Step 5
    Add coriander and 1/2 the spinach to the lentil mixture. Stir to combine. Top with remaining spinach, sweet potato and onion rings. Sprinkle with mint leaves and extra coriander sprigs. Serve with yoghurt and naan, if using.
