Ingredients

  • 850g beef rump steak (about 4cm thick)
  • 2 tablespoons peanut oil
  • 3 tablespoons phanaeng curry paste
  • 5 medium kaffir lime leaves, whole, plus extra 2 tsp leaves, very finely shredded
  • 1-2 small red chillies, very finely chopped (or to taste)
  • 4 red eschalots, peeled and sliced
  • 1 tablespoons fish sauce
  • 1 teaspoon palm sugar
  • 1/2 cup water
  • 1 1/2 cups coconut cream, plus 4 tsp extra
  • 1/2 cup Thai basil leaves
  • 1 tablespoons roasted unsalted peanuts, chopped

Method

  • Step 1
    Sear beef on a very hot char-grill for 2-3 minutes each side, or until medium rare. Set aside. Trim fat from meat.
  • Step 2
    Heat peanut oil in a wok over low heat and add curry paste. Stir-fry for 1-2 minutes or until aromatic.
  • Step 3
    Add whole lime leaves, chillis, eschalots, fish sauce, palm sugar and water, bring to a simmer and stir for 1-2 minutes.
  • Step 4
    Add all but four teaspoons of coconut cream and simmer over low heat for 3-4 minutes, stirring occasionally.
  • Step 5
    Thinly slice beef and add to sauce with meat juices. Add basil leaves and stir well.
  • Step 6
    Serve curry scattered with peanuts and topped with extra coconut cream and shredded lime leaves. Serve with steamed bok choy and boiled jasmine rice.
