  • 1100 g water
  • 400 g dried risoni pasta, rinsed, drained
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt, to taste
  • 4 sprigs fresh flat-leaf parsley, leaves only, plus extra leaves for garnishing
  • 130 g feta cheese
  • 340 g marinated artichoke hearts, drained
  • 60 g pine nuts, toasted
  • 100 g sun-dried tomatoes, cut into thin slices
  • 400 g canned chickpeas, rinsed and drained (approx. 250 g after draining)
  • 1 tbsp lemon juice
  • 1 pinch ground black pepper, to taste


  • Step 1
    Place water into mixing bowl and heat 10 min/100C/speed 1, until boiling.
  • Step 2
    Add risoni, 1 tbsp of the oil and salt and cook 7 min/100C/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.
  • Step 3
    Drain and rinse risoni through simmering basket, then transfer into a large serving bowl, drizzle risoni with remaining 1 tbsp oil and set aside. Clean and dry mixing bowl.
  • Step 4
    Place parsley into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula. Parsley should be a fine consistency. Repeat chopping if necessary.
  • Step 5
    Add feta and artichokes and chop 2 sec/speed 5. Transfer into serving bowl with risoni and set aside.
  • Step 6
    Place the large serving bowl onto mixing bowl lid, then weigh pine nuts and sun-dried tomatoes into it.
  • Step 7
    Add chickpeas, lemon juice and pepper to serving bowl, then stir well with spatula to combine. Serve salad garnished with extra parsley leaves.
