Ingredients

  • 2 tablespoons olive oil
  • 1 medium red onion, chopped
  • 1 medium green capsicum, finely diced
  • 1 medium carrot, finely diced
  • 1 celery stalk, finely diced
  • 125g butternut pumpkin, peeled, grated
  • 150g baby spinach, roughly chopped
  • 2 garlic cloves, crushed
  • 500g lean beef mince
  • 425g can chopped Italian plum tomatoes
  • 3 teaspoons tomato sauce
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon sun-dried tomato paste (see below)
  • 1 3/4 cups Massel beef stock
  • 1/2 cup red wine
  • 1 teaspoon dried mixed herbs
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon freshly cracked black pepper
  • 2 tablespoons chopped fresh flat-leaf parsley leaves
  • 1 teaspoon raw sugar
  • 550g spaghetti, cooked
  • Grated parmesan cheese, to serve
  • Fresh basil leaves, to serve

Method

  • Step 1
    Make tomato paste: 1 Place tomatoes in a heatproof bowl. Cover with hot water. Set aside, stirring occasionally, for 2 to 3 minutes or until softened. Drain. Place tomatoes, garlic and oil in a processor. Season with salt and pepper. Process until smooth.
  • Step 2
    Heat oil in a saucepan over low heat. Add onion, capsicum, carrot, celery, pumpkin, spinach and garlic. Cook, stirring, for 5 minutes or until onion has softened.
  • Step 3
    Increase heat to medium-high. Add mince. Cook, stirring with a wooden spoon to break up mince, for 10 minutes or until browned. Add tomato, sauces, tomato paste, stock, wine, mixed herbs, oregano, peppers, parsley and sugar. Bring to the boil. Reduce heat to low. Simmer, uncovered, stirring occasionally, for 1 hour 30 minutes or until reduced. Season with salt and pepper.
  • Step 4
    Divide pasta between bowls. Top with sauce. Serve with parmesan and basil.
