  • 20ml oil
  • 2 onions, chopped
  • 5 cloves garlic, chopped
  • 3 carrots, chopped
  • 2 capsicums, chopped, any colour or combination
  • 8 tomatoes, chopped
  • 1 bunch fresh basil
  • 1 zucchini, chopped
  • 1/2 bunch celery, chopped
  • 1 tablespoon olive oil
  • 1 cup water
  • 1 cup Massel vegetable liquid stock
  • 20ml tomato puree


  • Step 1
    Heat oil in a large saucepan and fry onions, garlic and carrot until the onions start to soften. Add all the other vegetables to the pan.
  • Step 2
    Add the water, stock and tomato puree and bring to a simmer, cover and check every 10 to 15 minutes.
  • Step 3
    After an hour, take the lid off and reduce any excess liquid. Continue to simmer for another half hour. Once everything is cooked, get a stick blender and blend to a smooth consistency.
