  • 2 large (about 350g) desiree potatoes
  • 3 large garlic cloves, peeled
  • 8 large English spinach leaves, washed, stems, removed
  • 3 slices white bread, crusts removed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 2 tablespoons chopped fresh continental parsley
  • Salt & ground black pepper

  • Step 1
    Mixed whole small vegetables or vegetable sticks (like carrots, celery, cucumber, capsicum, snow peas, zucchini and green shallots), to serve
  • Step 2
    Place the unpeeled potatoes into a saucepan, cover with cold water and bring to the boil over high heat. Reduce heat to medium-high and gently boil for 25 minutes.
  • Step 3
    Add the garlic and cook for a further 5 minutes or until the potatoes and garlic are soft. Use a slotted spoon to remove the potatoes and garlic from the pan and cool for 15 minutes.
  • Step 4
    Meanwhile, add spinach to the water in saucepan and cook for 30 seconds or until wilted. Drain, refresh under cold running water and then drain well. Squeeze excess moisture from spinach and chop finely.
  • Step 5
    Soak the bread in cold water to cover for 1 minute. Drain and then squeeze the excess moisture from the bread.
  • Step 6
    Peel the potatoes and place them in a medium bowl with the garlic. Use a potato masher to mash the potatoes and garlic until smooth.

    Add the spinach and bread and mix with a wooden spoon until well combined. Add the olive
