  • 400g flame seedless grapes, picked
  • 2 tablespoons pine nuts, toasted
  • 3 teaspoons Moro white balsamic dressing
  • 80g baby rocket leaves
  • Salt & freshly ground pepper
  • 1 tablespoon extra virgin olive oil, plus extra to brush
  • 240g haloumi


  • Step 1
    Cut the grapes in half lengthways. Place in a bowl. Add the pine nuts and balsamic vinegar. Toss to combine. Set aside.

    Meanwhile, toss the rocket in the oil and season with salt and pepper. Divide among serving plates.
  • Step 3
    Slice the haloumi into eight 1cm-thick slices. Brush both sides of the haloumi with the extra olive oil.
  • Step 4
    Heat a large frying pan over a medium-high heat. Add the haloumi and cook, for 1-2 minutes each side or until golden. Top the rocket with the haloumi and spoon over the grape dressing. Serve immediately.
