  • 4 (300g) freshwater trout, scaled, gutted
  • 1 bunch English spinach, washed, dried, stems removed
  • 2 tablespoons pine nuts
  • 100g Greek feta, crumbled
  • 70g (1 cup) fresh coarse white breadcrumbs, from day-old bread
  • 1 tablespoon fresh thyme leaves
  • 1/2 teaspoon salt
  • Cracked black pepper
  • 1 tablespoon olive oil
  • Canola cooking spray, to grease


  • Step 1
    Remove the trout from the fridge 5 minutes before cooking.
  • Step 2
    Rinse trout inside and out. Pat dry with paper towel. Cut two 1cm-deep, 6cm-long slashes, 4cm apart in the thickest part of the flesh on each side.

    Wash spinach under cold water, shake and place wetted leaves in a medium saucepan. Cook, covered, over medium heat for 4-5 minutes or until wilted. Place in a colander and set aside for 5 minutes to cool. Press to remove excess liquid, chop roughly and place in a medium bowl.

    Cook pine nuts in a small frying pan, stirring, over medium heat for 2-3 minutes or until golden. Transfer to a board and chop roughly. Add pine nuts, feta, breadcrumbs, thyme, salt and pepper to spinach and mix well.
  • Step 5
    Pack a quarter of the mixture loosely into each trout cavity. Rub trout all over with oil. Place trout side by side in a well-oiled, hinged wire frame.
  • Step 6
    Spray the cold barbecue grill with the cooking spray and then preheat on medium for 5 minutes.
  • Step 7
    Place trout in frame on grill and cook for 4-5 minutes each side or until cooked. To check, open frame and part one slash. If there is more than 2mm of pink flesh close to bone, re-clip and cook for a further 1-2 minutes.
  • Step 8
    To serve, use tongs to transfer the trout to serving plates.
