  • 2 teaspoons rice bran oil
  • 750g pork neck (scotch), cut into 3cm pieces
  • 2 garlic cloves, finely chopped
  • 2cm piece fresh ginger, finely grated
  • 1/4 cup shao hsing (Chinese cooking wine)
  • 3/4 cup plum jam
  • 1 1/2 cups Massel salt reduced chicken style liquid stock
  • 2 star anise
  • 1 tablespoon soy sauce
  • 2 tablespoons fresh coriander sprigs
  • Steamed jasmine rice, to serve
  • Snow peas, to serve


  • Step 1
    Heat oil in a heavy-based saucepan over medium-high heat. Cook pork, in batches, 5 minutes or until browned. Transfer to plate.
  • Step 2
    Add garlic and ginger to pan. Cook, stirring, for 1 minute or until fragrant. Add wine. Cook for 1 minute or until reduced. Return pork to pan with jam, stock and star anise. Simmer, uncovered, for 1 hour 30 minutes or until sauce is thick and pork is tender. Discard star anise. Stir in soy. Season.
  • Step 3
    Sprinkle pork with coriander. Serve with rice and snow peas.
