Ingredients

  • 1/4 cup shallots or purple onion
  • 6 cloves garlic, finely chopped
  • 2 thumb size ginger, cut into matchsticks
  • 1 fresh chilli (more if you like very spicy)
  • 1 carrot, sliced
  • 6 shiiitake mushrooms, chopped
  • 1 small head broccoli, cut into small florets
  • 1 red capsicum, sliced into strips
  • 3 cups bok choy
  • Bamboo shoots (optional)
  • Water chestnuts (optional)
  • Baby corn (optional)
  • Sesame oil
  • Fresh coriander, to taste
  • Cashew nuts, to garnish

Method

  • Step 1
    Combine all stir fry sauce ingredients together in a cup or bowl. Stir well to dissolve the sugar. Taste-test the sauce, keeping in mind that the first taste should be spicy-salty, followed by sweetness and the rich taste of the coconut milk. Adjust these flavours to suit your taste, adding more lime juice if too sweet or salty.
  • Step 2
    Add oil to a warm wok. Add shallot/onion, garlic, ginger, and chilli. Stir fry 1-2 minutes.
  • Step 3
    Add carrot and mushrooms along with 1/4 of the sauce mixture. Keep frying for another 2-3 minutes.
  • Step 4
    Add broccoli, capsicum, bamboo shoots etc and 1/2 the remaining sauce. Simmer for a couple of minutes.
  • Step 5
    Add the bok choy plus remaining sauce. Allow to steam for another couple of minutes.
  • Step 6
    Remove from heat and toss through fresh coriander to your taste. Finish off the dish with a sprinkle of cashew nuts.
