While the motor is running, slowly drizzle in the oil until fully emulsified. Transfer the aïoli to a bowl and fold in the chilli, coriander and lime zest. Season to taste with salt and pepper.
  • Step 3
    To serve: Transfer the sauces to 2 small dipping bowls. Place the crushed ice on a platter and sprinkle with salt. Place the prawns on the ice and serve with the dipping sauces.
