Ingredients

  • Vegetable oil, to grease
  • 270g (1 1/4 cups) caster sugar
  • 5 tablespoons water
  • 10 drops red liquid food colouring
  • Silver and gold cachous, to decorate

Method

  • Step 1
    Line a baking tray with foil. Brush with oil to lightly grease. Brush the inside of five 7.5cm-diameter star-shaped metal pastry cutters with oil to lightly grease. Place on the lined tray.
  • Step 2
    Combine 100g (1/2 cup) of the sugar, 2 tablespoons of the water and 5 drops of the red food colouring in a medium heavy-based saucepan and stir over low heat until sugar dissolves. Increase heat to medium and boil, brushing down the side of the pan occasionally with a pastry brush dipped in water, for 7 minutes or until a sugar thermometer reaches 154°C or “crack stage”. (If you don’t have a thermometer, remove toffee from heat and set aside for 5 minutes or until the bubbles subside. Drop 1 teaspoonful of toffee into a glass of cold water. If toffee becomes hard it is at crack stage.)
  • Step 3
    Remove toffee from heat and set aside until bubbles subside. Carefully pour toffee into prepared pastry cutters until about two-thirds full. Sprinkle with cachous and set aside for 30 minutes or until set. Remove toffee stars from cutters and place face down on a sheet of non-stick baking paper.
  • Step 4
    Repeat with 100g (1/2 cup) of the sugar, 2 tablespoons of the water and the remaining food colouring to make 5 more stars.
  • Step 5
    Combine the remaining sugar and water in a small saucepan and stir over low heat until sugar dissolves. Increase heat to medium and boil for 4-5 minutes or until toffee is golden. Remove from heat and set aside until bubbles subside. Tilt the pan. Dip a skewer or iceblock stick into the toffee to a depth of about 3cm. Quickly place on the back of a star to attach. Repeat with the remaining toffee, skewers and stars. Set aside for 10 minutes or until set.
