270g packet dried udon noodles

1 bunch asparagus, trimmed, halved

1 bunch broccolini, trimmed, halved lengthways

1/2 cup frozen peas

2 tablespoons white miso paste

1 tablespoon caster sugar

1/3 cup rice wine vinegar

2 tablespoons salt-reduced soy sauce

1 tablespoon sesame oil

60g baby spinach

2 tablespoons roughly chopped fresh chives

2 tablespoons pickled ginger, torn
Method

Step 1Cook noodles following packet directions, adding asparagus, broccolini and peas in the last 2 minutes of cooking time. Drain. Rinse under cold water. Drain. Transfer to a bowl.

Step 2Place miso and sugar in a small bowl. Slowly whisk in vinegar until smooth. Add soy sauce and sesame oil. Stir to combine.

Step 3Add dressing, baby spinach, chives and pickled ginger to noodle mixture. Toss to combine. Serve.
