  • 270g packet dried udon noodles
  • 1 bunch asparagus, trimmed, halved
  • 1 bunch broccolini, trimmed, halved lengthways
  • 1/2 cup frozen peas
  • 2 tablespoons white miso paste
  • 1 tablespoon caster sugar
  • 1/3 cup rice wine vinegar
  • 2 tablespoons salt-reduced soy sauce
  • 1 tablespoon sesame oil
  • 60g baby spinach
  • 2 tablespoons roughly chopped fresh chives
  • 2 tablespoons pickled ginger, torn


  • Step 1
    Cook noodles following packet directions, adding asparagus, broccolini and peas in the last 2 minutes of cooking time. Drain. Rinse under cold water. Drain. Transfer to a bowl.
  • Step 2
    Place miso and sugar in a small bowl. Slowly whisk in vinegar until smooth. Add soy sauce and sesame oil. Stir to combine.
  • Step 3
    Add dressing, baby spinach, chives and pickled ginger to noodle mixture. Toss to combine. Serve.
