  • 2 tablespoons olive oil
  • 8 (about 100g each) veal schnitzels
  • 200g haloumi, drained, cut into 2cm cubes
  • 100g baby spinach leaves
  • 100g semi-dried tomatoes, drained on paper towel, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons drained chopped capers
  • Freshly ground black pepper

    Heat 2 teaspoons of the oil in a large frying pan over medium-high heat. Add half the veal and cook for 2 minutes each side for medium-rare or until cooked to your liking. Transfer to a plate and cover with foil to keep warm. Repeat with remaining veal.

    Wipe pan clean with paper towel. Heat 2 teaspoons of oil in frying pan over medium-high heat. Add haloumi and cook for 30 seconds each side or until brown and heated through. Transfer to a bowl. Add spinach leaves and semi-dried tomatoes and toss to combine.
  • Step 3
    Combine remaining oil, lemon juice and capers in a bowl. Drizzle salad with dressing and toss to combine. Season with pepper.
  • Step 4
    Arrange veal on serving plates. Top with salad and serve immediately.
