Ingredients

  • 40g (1/4 cup) plain flour
  • Salt & ground black pepper, to taste
  • 4 (about 125g each) veal leg steaks
  • 20g (1 tablespoon) butter
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 125ml (1/2 cup) Massel chicken style liquid stock
  • 125ml (1/2 cup) thickened cream
  • 2 teaspoons fresh thyme leaves
  • 6 (about 300g) chat (small coliban) potatoes, halved
  • 1 bunch Dutch (baby) carrots, tops trimmed, washed
  • 180g green beans, topped

Method

  • Step 1
    Place the flour on a large plate and season with salt and pepper. Toss the veal steaks in the flour to coat, shaking off the excess.
  • Step 2
    Heat the butter and oil in a large frying pan over medium-high heat. Add 2 veal steaks and cook for 2-3 minutes each side or until golden brown and cooked through. Transfer to a plate, cover loosely with foil and set aside. Repeat with the remaining veal steaks.
  • Step 3
    Add lemon juice to pan and simmer, uncovered, for 30 seconds or until reduced by 1/2. Combine stock and cream, and add to the pan. Reduce heat to medium and simmer, stirring often, for 4 minutes or until the sauce reduces and thickens slightly. Season with salt and pepper. Return the veal steaks to the frying pan. Add the thyme and turn the steaks to coat in the sauce.
  • Step 4
    Meanwhile, bring a large saucepan of salted water to the boil over high heat. Add the potatoes and cook, uncovered, for 5 minutes. Add the carrots and cook for a further 2 minutes. Add the beans and cook for a further minute or until all the vegetables are tender.
  • Step 5
    To serve, place the veal steaks on serving plates, drizzle with the sauce and serve with the vegetables
