  • 1/2 a star anise
  • 1 nutmeg
  • 1 teaspoon ground ginger
  • 1 cinnamon stick
  • 7 peppercorns
  • 1 litre bold red wine
  • 1 cup sugar
  • 2 oranges
  • 7 cloves
  • 1 lemon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt, if required


  • Step 1
    In a large heavy saucepan, toast the star anise, two good grates of nutmeg, the ground ginger, cinnamon and the peppercorns. When they smell fragrant, pour in the red wine and the sugar and stir.
  • Step 2
    Peel a long length of orange zest and stud it with the cloves. Drop into the saucepan. Slice the oranges (reserving a few slices to serve) and the lemon thinly and remove any pips. Add to the wine along with any juice that has come out while slicing. Bring the wine mixture to a simmer and add the vanilla extract. Taste.
  • Step 3
    If the vin chaud (or mulled wine) tastes sour, add more sugar. If it tastes bitter (from either the wine or the pith of the citrus fruit), add salt. Strain out the spices and citrus slices. Serve in warmed glasses with a slice of orange.
