Ingredients

  • 1/4 cup (25g) walnuts
  • 8 slices (100g) pancetta or prosciutto
  • 2 golden delicious or Granny Smith apples, cored, peeled and sliced
  • 200g packet gourmet salad
  • 1/4 cup (60ml) extra virgin olive oil
  • 1/4 cup (60ml) apple cider vinegar
  • 1 teaspoon sugar
  • 2 tablespoons shaved parmesan cheese

Method

  • Step 1
    Toast the walnuts in a frying pan over a medium heat, tossing until fragrant. Remove and set aside.
  • Step 2
    Add the pancetta and cook until crisp. Remove and set aside. Tear into rough pieces. Add the apples. Cook on both sides until golden.
  • Step 3
    Combine the walnuts, torn pancetta, apples and salad leaves in a large bowl. Whisk the extra virgin olive oil, apple cider vinegar and sugar in a small bowl. Pour the dressing over the salad. To serve, scatter with the parmesan.
