  • 1/4 cup (55g) caster sugar
  • 2 mint sprigs
  • 1.5kg watermelon, peeled, coarsely chopped
  • 60g fresh or frozen raspberries
  • 1.5L chilled sparkling apple juice or lemonade


  • Step 1
    Combine the sugar, mint and � cup (125ml) water in a small saucepan over low heat. Cook, stirring, for 5 mins or until the sugar dissolves and the mixture thickens slightly. Set aside to cool slightly. Carefully remove the mint and discard.
  • Step 2
    Place syrup, watermelon and raspberries in a food processor and process until smooth. Strain the mixture through a fine sieve into a large jug, using the back of a spoon to push as much mixture through as possible.
  • Step 3
    Pour mixture evenly among twelve 1/3-cup (80ml) iceblock moulds. Insert iceblock sticks. Place in the freezer for 6 hours or until frozen.
  • Step 4
    Place the iceblocks in serving glasses. Pour over the apple juice or lemonade. Serve immediately.
