125g white choc bits

2 eggs, lightly beaten

1 cup buttermilk

1 teaspoon vanilla extract

100g butter, melted

150g punnet blackberries
Method

Step 1Preheat oven to 180�C. Lightly grease a 12 x 1/2-cup capacity muffin pan. Sift flour and baking powder into a large bowl. Add sugar and choc bits. Stir until well combined.

Step 2Whisk eggs, buttermilk, vanilla and butter together in a separate bowl.

Step 3Using a large metal spoon, stir butter mixture into flour mixture until just combined. Gently swirl through berries.

Step 4Spoon mixture into muffin holes. Bake for 25 to 30 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes. Turn onto a wire rack. Serve.
